Ingredients

  • 150 g dark chocolate (70% cocoa)
  • 150 g unsalted butter
  • 150 g granulated sugar
  • 3 large eggs
  • 75 g all-purpose flour
  • 1 tbsp cocoa powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Instructions

  • Preheat the Oven: Preheat your oven to 180°C (350°F).
  • Prepare the Ramekins: Grease 4 individual ramekins (about 200ml capacity) with butter and dust them with cocoa powder. This prevents the puddings from sticking.
  • Melt the Chocolate and Butter: Break the dark chocolate into small pieces and chop the unsalted butter into cubes. Place them in a heatproof bowl and melt them together. You can do this by microwaving in 20-second intervals or by using a double boiler on the stove. Stir until smooth, and then let it cool slightly.
  • Mix the Dry Ingredients: In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt.
  • Beat the Eggs and Sugar: In another mixing bowl, beat the eggs and granulated sugar together until the mixture is pale and creamy.
  • Combine Wet and Dry Ingredients: Pour the melted chocolate and butter mixture into the egg and sugar mixture. Add the vanilla extract and gently mix until well combined.
  • Fold in the Dry Ingredients: Gradually fold in the sifted dry ingredients (flour, cocoa powder, and salt) into the chocolate mixture until you have a smooth batter.
  • Fill the Ramekins: Divide the batter evenly among the greased and cocoa-dusted ramekins.
  • Bake: Place the filled ramekins on a baking tray and bake in the preheated oven for about 15 minutes. The edges should be set, but the centers will still be slightly jiggly.
  • Serve: Carefully remove the ramekins from the oven. You can either serve them directly in the ramekins or gently invert them onto dessert plates for a more dramatic presentation. The lava pudding should be gooey in the center when served.
  • Optional Garnish: You can dust the top of the lava puddings with powdered sugar, add a scoop of vanilla ice cream, or a dollop of whipped cream for extra indulgence.
