Heat the olive oil in a large pot over medium-high heat.
Add the beef cubes and brown them on all sides, about 5 minutes. Remove the beef from the pot and set it aside.
In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3 minutes.
Add the carrots, celery, turnip, and zucchini to the pot. Cook for another 5 minutes, stirring occasionally.
Return the browned beef to the pot and add the dried thyme, dried rosemary, and bay leaf. Stir to combine.
Pour in the diced tomatoes and beef broth. Season with salt and pepper to taste.
Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
Taste and adjust the seasoning if needed.
Remove the bay leaf before serving.
