Ingredients
- 500 g beef stew meat cut into cubes
- 2 tbsp olive oil
- 1 onion chopped
- 2 garlic clove minced
- 2 carrots peeled and sliced
- 2 celery stalks chopped
- 1 turnip diced
- 1 zucchini diced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- 400 g canned tomatoes diced
- 750 ml beef broth
- salt to taste
- pepper to taste
- fresh parsley chopped, (for garnish)
Instructions
- Heat the olive oil in a large pot over medium-high heat.
- Add the beef cubes and brown them on all sides, about 5 minutes. Remove the beef from the pot and set it aside.
- In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3 minutes.
- Add the carrots, celery, turnip, and zucchini to the pot. Cook for another 5 minutes, stirring occasionally.
- Return the browned beef to the pot and add the dried thyme, dried rosemary, and bay leaf. Stir to combine.
- Pour in the diced tomatoes and beef broth. Season with salt and pepper to taste.
- Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
- Taste and adjust the seasoning if needed.
- Remove the bay leaf before serving.
