Ingredients

  • 500 g beef stew meat cut into cubes
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 garlic clove minced
  • 2 carrots peeled and sliced
  • 2 celery stalks chopped
  • 1 turnip diced
  • 1 zucchini diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 400 g canned tomatoes diced
  • 750 ml beef broth
  • salt to taste
  • pepper to taste
  • fresh parsley chopped, (for garnish)

Instructions

  • Heat the olive oil in a large pot over medium-high heat.
  • Add the beef cubes and brown them on all sides, about 5 minutes. Remove the beef from the pot and set it aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3 minutes.
  • Add the carrots, celery, turnip, and zucchini to the pot. Cook for another 5 minutes, stirring occasionally.
  • Return the browned beef to the pot and add the dried thyme, dried rosemary, and bay leaf. Stir to combine.
  • Pour in the diced tomatoes and beef broth. Season with salt and pepper to taste.
  • Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  • Taste and adjust the seasoning if needed.
  • Remove the bay leaf before serving.
  • Garnish the stew with chopped fresh parsley before serving.
