Ingredients
Broth
- 1 kg beef bones
- 2 liters water
- 1 onion peeled and halved
- 2 garlic cloves peeled and smashed
- 2 slices of ginger
- 2 star anise
- 1 cinnamon stick
- 2 cloves
- 1 cardamon pod
- salt to taste
Soup
- 300 g beef (such as sirloin or flank steak) thinly sliced
- 250 g dried wheat noodles
- 150 g bok choy or spinach chopped
- 2-3 spring onions chopped
- 1-2 fresh red chilies thinly sliced (optional)
- fresh coriander leaves for garnish (optional)
- soy sauce to taste
- fish sauce to taste
- lime wedges for serving
Instructions
Prepare the Broth:
- Place the beef bones in a large pot, cover with cold water, and bring to a boil. Let it boil for about 5 minutes, then drain and rinse the bones to remove impurities.
- In the same pot, add 2 liters of water, beef bones, onion halves, smashed garlic, ginger slices, star anise, cinnamon stick, cloves, and cardamom pod.
- Bring the mixture to a boil, then reduce the heat to low and simmer for at least 1.5 to 2 hours. The longer you simmer, the richer the broth will become.
- Skim off any scum that rises to the surface during simmering.
- Season the broth with salt to taste.
Prepare the Noodles:
- While the broth is simmering, cook the dried noodles according to the package instructions. Drain and set aside.
Prepare the Beef:
- Slice the beef thinly and set it aside.
Assemble the Soup:
- Strain the broth to remove all solids, leaving a clear and flavorful broth.
Serve:
- In serving bowls, place a portion of cooked noodles, sliced beef, and chopped bok choy or spinach.
- Ladle the hot beef broth over the noodles and beef. The hot broth will cook the beef slices.
- Garnish with chopped spring onions, fresh red chilies (if you like it spicy), and cilantro leaves (if desired).
