Ingredients

Beef Marinade

  • 500 g beef tenderloin or sirloin thinly sliced into strips
  • 2 garlic cloves minced
  • 1 tbsp Worcestershire sauce
  • salt and pepper to taste

Stroganoff Sauce

  • 2 tbsp butter
  • 1 medium onion finely chopped
  • 225 g mushrooms sliced
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Dijon mustard
  • 1/2 cup sour cream
  • salt and pepper

Serving

  • cooked egg noodles, rice, or mashed potatoes
  • fresh parsley chopped (for garnish)

Instructions

Marinate the Beef:

  • In a bowl, combine the sliced beef, minced garlic, Worcestershire sauce, salt, and pepper. Let it marinate for at least 15-30 minutes, or you can marinate it in the refrigerator for a few hours for better flavor.

Cook the Beef:

  • Heat a large skillet or pan over medium-high heat. Add a bit of oil to prevent sticking.
  • Remove the beef from the marinade and shake off any excess liquid.
  • Add the beef strips to the hot pan and cook for 1-2 minutes per side until they are browned and cooked to your desired level of doneness. Remove the beef from the pan and set it aside.

Saute the Mushrooms and Onions:

  • In the same pan, add 2 tablespoons of butter. Once melted, add the chopped onions and sliced mushrooms.
  • Cook the onions and mushrooms until they are softened and the mushrooms release their moisture, about 5-7 minutes.

Make the Sauce:

  • Sprinkle the flour over the mushrooms and onions. Stir and cook for about 2 minutes to get rid of the raw flour taste.
  • Gradually pour in the beef broth while stirring continuously to avoid lumps.
  • Add the Dijon mustard, salt, and pepper. Allow the sauce to simmer and thicken for about 5 minutes.

Combine Everything:

  • Return the cooked beef to the pan with the mushroom sauce. Stir to combine and let it heat through for another 2-3 minutes.

Add Sour Cream:

  • Reduce the heat to low and stir in the sour cream. Make sure not to boil the sauce after adding the sour cream, as it can curdle. Just heat it gently.

Serve:

  • Taste and adjust the seasoning with more salt and pepper if needed.
  • Serve the Beef Stroganoff over cooked egg noodles, rice, or mashed potatoes.
  • Garnish with chopped fresh parsley.
