Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs
  • salt and pepper to taste
  • 1 tsp paprika (optional, for added flavor)
  • vegetable oil for frying (enough to cover the bottom of your frying pan)
  • lemon wedges for serving

Instructions

Prepare the Chicken:

  • Place each chicken breast between two sheets of plastic wrap or parchment paper.
  • Pound the chicken breasts with a meat mallet or rolling pin until they are about 1/2 inch (1.25cm) thick. This will help tenderize the meat and ensure even cooking.

Set up Breading Station:

  • In three separate shallow dishes, set up a breading station. Place the flour in one dish, beat the eggs in another, and combine the breadcrumbs with salt, pepper, and paprika (if using) in the third dish.

Coat the Chicken:

  • Season each chicken breast with a pinch of salt and pepper.
  • Dredge each chicken breast in the flour, making sure to coat both sides. Shake off any excess flour.
  • Dip the floured chicken into the beaten eggs, ensuring it's fully coated.
  • Finally, coat the chicken with the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere well. Repeat this step for all the chicken breasts.

Heat the Oil:

  • In a large skillet or frying pan, add enough vegetable oil to cover the bottom by about 1/4 inch (0.6cm). Heat the oil over medium-high heat until it reaches a temperature of about 175°C (350°F). You can test the oil's readiness by dropping a small breadcrumb into it – it should sizzle and brown within seconds.

Fry the Chicken Schnitzel:

  • Carefully place the breaded chicken breasts into the hot oil. Be cautious not to overcrowd the pan; you may need to fry them in batches.
  • Fry each side for about 3-4 minutes or until they are golden brown and crispy. The exact cooking time may vary depending on the thickness of the chicken. Use tongs to flip the chicken halfway through cooking.
  • Once cooked, transfer the chicken schnitzel to a plate lined with paper towels to drain any excess oil.

Serve:

  • Serve the chicken schnitzel hot with lemon wedges on the side for a burst of fresh flavor. You can also add a side salad, mashed potatoes, or any other side dishes of your choice.
