Ingredients

Chicken

  • 2 boneless, skinless chicken breasts (about 250g each)
  • salt and pepper to taste
  • 1 tbsp olive oil

Alfredo Sauce

  • 250 g fettuccine pasta
  • 60 g unsalted butter
  • 250 ml heavy cream (also known as double cream)
  • 125 g grated Parmesan cheese
  • 2 garlic cloves
  • salt and pepper to taste
  • A pinch of ground nutmeg (optional)

Instructions

Prepare the Chicken:

  • Season the chicken breasts with salt and pepper on both sides.
  • Heat the olive oil in a skillet over medium-high heat.
  • Cook the chicken breasts for about 6-7 minutes per side or until they are cooked through (internal temperature should reach 75°C). Remove from heat and let them rest for a few minutes, then slice into strips.

Cook the Fettuccine:

  • In a large pot of boiling salted water, cook the fettuccine according to the package instructions until al dente. Drain and set aside.

Make the Alfredo Sauce:

  • In a large skillet, melt the butter over medium heat.
  • Add the minced garlic and sauté for about 1 minute until fragrant, but be careful not to let it brown.
  • Pour in the heavy cream and bring it to a gentle simmer.
  • Reduce the heat to low and stir in the grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce thickens. This will take about 2-3 minutes.
  • Season the sauce with salt, pepper, and a pinch of ground nutmeg (if desired).

Combine the Chicken and Sauce:

  • Add the cooked chicken strips to the Alfredo sauce, and stir to combine. Let them warm up together for a couple of minutes.

Serve:

  • Plate the cooked fettuccine and top it with the creamy chicken Alfredo sauce.
  • Garnish with additional grated Parmesan cheese and freshly ground black pepper if desired.
