Ingredients

  • 4 tbsp all-purpose flour
  • 2 tbsp granulated sugar
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 3 tbsp milk
  • 1 tbsp vegetable oil
  • 1/4 tsp vanilla extract
  • 1/4 cup fresh or frozen blue berries

Instructions

  • Prepare Your Mug: Choose a microwave-safe mug with a capacity of at least 8 ounces (about 240 milliliters) to prevent overflowing. Lightly grease the inside of the mug with a small amount of oil or cooking spray to prevent sticking.
  • Combine Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.
  • Add Wet Ingredients: Pour in the milk, vegetable oil, and vanilla extract into the dry ingredient mixture. Stir everything together until you have a smooth batter with no lumps.
  • Add Blueberries: Gently fold in the fresh or frozen blueberries into the batter. Be careful not to overmix, as this can cause the blueberries to burst.
  • Fill the Mug: Pour the batter into your greased microwave-safe mug. Make sure it's filled only about halfway to allow room for the cake to rise as it cooks.
  • Microwave: Microwave the mug cake on high for about 1 minute and 30 seconds to 2 minutes. Cooking time may vary depending on your microwave's wattage, so keep an eye on it. The cake is done when it has risen and is firm to the touch.
  • Cool Slightly: Carefully remove the mug from the microwave (it will be hot) and let it cool for a minute or two before serving.
  • Enjoy: Grab a spoon and enjoy your blueberry mug cake right from the mug. You can also top it with a scoop of ice cream, a dollop of whipped cream, or a dusting of powdered sugar if you like.
Remember to exercise caution when removing the hot mug from the microwave, and allow it to cool a bit before digging in. Enjoy your delicious blueberry mug cake!
