Ingredients
Crust
- 200 g plain flour
- 100 g unsalted butter cold and cubed
- 50 g icing sugar
- a pinch of salt
Filling
- 4 large eggs
- 200 g granulated sugar
- zest of 2 lemons
- zest of 2 limes
- juice of 2 lemons (about 120ml)
- juice of 2 limes (about 80ml)
- 120 ml heavy cream
For the Topping (optional)
- Whipped cream
- Sliced lemon and lime for garnish
Instructions
Preheat the Oven:
- Preheat your oven to 180°C (350°F).
Make the Crust:
- In a mixing bowl, combine the crushed biscuits, melted butter, and sugar.
- Press the mixture firmly into the bottom and up the sides of a 9-inch (23 cm) tart pan with a removable bottom.
- Bake the crust for about 10 minutes, or until it turns golden brown. Remove from the oven and allow it to cool.
Prepare the Filling:
- In a large mixing bowl, whisk together the eggs and sugar until well combined.
- Add the lemon and lime zest and whisk again.
- Slowly pour in the lemon and lime juice, whisking continuously.
- Finally, stir in the heavy cream until the mixture is smooth.
Bake the Tart:
- Pour the filling mixture into the prepared crust.
- Bake the tart in the preheated oven for 25 minutes, or until the filling is set and the edges are slightly golden.
- Remove the tart from the oven and allow it to cool to room temperature. Then refrigerate for at least 2 hours to chill and set completely.
Serve:
