Ingredients

Crust

  • 200 g plain flour
  • 100 g unsalted butter cold and cubed
  • 50 g icing sugar
  • a pinch of salt

Filling

  • 4 large eggs
  • 200 g granulated sugar
  • zest of 2 lemons
  • zest of 2 limes
  • juice of 2 lemons (about 120ml)
  • juice of 2 limes (about 80ml)
  • 120 ml heavy cream

For the Topping (optional)

  • Whipped cream
  • Sliced lemon and lime for garnish

Instructions

Preheat the Oven:

  • Preheat your oven to 180°C (350°F).

Make the Crust:

  • In a mixing bowl, combine the crushed biscuits, melted butter, and sugar.
  • Press the mixture firmly into the bottom and up the sides of a 9-inch (23 cm) tart pan with a removable bottom.
  • Bake the crust for about 10 minutes, or until it turns golden brown. Remove from the oven and allow it to cool.

Prepare the Filling:

  • In a large mixing bowl, whisk together the eggs and sugar until well combined.
  • Add the lemon and lime zest and whisk again.
  • Slowly pour in the lemon and lime juice, whisking continuously.
  • Finally, stir in the heavy cream until the mixture is smooth.

Bake the Tart:

  • Pour the filling mixture into the prepared crust.
  • Bake the tart in the preheated oven for 25 minutes, or until the filling is set and the edges are slightly golden.
  • Remove the tart from the oven and allow it to cool to room temperature. Then refrigerate for at least 2 hours to chill and set completely.

Serve:

  • Once the tart has chilled, you can serve it as is or garnish it with whipped cream and slices of lemon and lime.
