Ingredients

  • 400 g canned black beans drained and rinsed
  • 100 g breadcrumbs
  • 1 small onion finely chopped
  • 1 garlic clove minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder (adjust to taste)
  • salt and pepper to taste
  • 1 tbsp olive oil
  • 1 flax egg (1 tablespoon ground flaxseeds mixed with 3 tablespoons water)
  • 4 whole wheat burger buns
  • Toppings of your choice: lettuce, tomato, avocado, vegan mayo, etc.

Instructions

  • Prepare the Flax Egg: In a small bowl, mix 1 tablespoon of ground flaxseeds with 3 tablespoons of water. Let it sit for about 5 minutes to thicken and form a gel-like consistency.
  • Sauté Onion and Garlic: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent.
  • Prepare the Bean Mixture: In a large mixing bowl, add the drained and rinsed black beans. Mash them with a fork or potato masher until mostly smooth, leaving some small chunks for texture.
  • Combine Ingredients: Add the sautéed onion and garlic, flax egg, breadcrumbs, ground cumin, paprika, chili powder, salt, and pepper to the mashed beans. Mix everything together until well combined.
  • Form Patties: Divide the mixture into 4 equal portions. Shape each portion into a patty using your hands. If the mixture is too sticky, you can wet your hands to prevent it from sticking.
  • Cook the Burgers: Heat a bit of olive oil in a skillet over medium-high heat. Once hot, add the black bean burger patties. Cook each side for about 4-5 minutes, or until they are nicely browned and heated through.
  • Assemble the Burgers: Toast the whole wheat burger buns if desired. Place a black bean patty on the bottom half of each bun. Add your choice of toppings like lettuce, tomato, avocado, and vegan mayo. Top with the other half of the bun.
  • Serve: Serve your vegan black bean burgers hot with a side of your favorite salad or fries.
