Ingredients

Cake

  • 250 all-purpose flour
  • 250 granulated sugar
  • 250 unsalted butter softened
  • 4 large eggs
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 cup whole milk

Frosting (optional):

  • 250 g unsalted butter softened
  • 500 g powdered sugar (icing sugar)
  • 2 vanilla extract
  • 2-4 milk as needed

Instructions

  • Preheat your oven to 180°C (350°F). Grease and flour two 20cm (8-inch) round cake pans or line them with parchment paper.
  • In a mixing bowl, sift together the flour, baking powder, and baking soda. Set aside.
  • In a separate large bowl, cream together the softened butter and sugar until light and fluffy. This should take about 2-3 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined. Do not overmix.
  • Divide the cake batter equally between the prepared pans and smooth the tops with a spatula.
  • Bake in the preheated oven for approximately 25 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  • Remove the cakes from the oven and let them cool in the pans for about 10 minutes. Then, remove them from the pans and allow them to cool completely on a wire rack.
  • If you're making frosting, in a separate bowl, beat the softened butter until creamy. Gradually add the powdered sugar and beat until well combined. Stir in the vanilla extract. If the frosting is too thick, add milk a tablespoon at a time until you reach your desired consistency.
  • Once the cakes are completely cool, you can frost them. Place one cake layer on a serving plate, spread a layer of frosting on top, then place the second cake layer on top of that. Frost the top and sides of the cake with the remaining frosting.
  • Decorate the cake as desired with sprinkles, fruit, or additional decorations.
  • Slice, serve, and enjoy your homemade vanilla cake!
