Ingredients

  • 500 g chicken breasts boneless and skinless (cut into bite-sized pieces)
  • 200 g fresh spinach leaves
  • 250 ml heavy cream
  • 30 g butter
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 200 g mushrooms sliced
  • 30 g Parmesan cheese grated
  • 15 ml olive oil
  • salt
  • pepper

Instructions

  • Heat the olive oil in a large pan over medium-high heat.
  • Add the chicken pieces to the pan and cook until they are no longer pink in the center, about 5-7 minutes. Season with salt and pepper. Remove the chicken from the pan and set it aside.
  • In the same pan, add the butter and chopped onion. Cook the onion until it becomes translucent, about 2-3 minutes.
  • Add the minced garlic and sliced mushrooms to the pan. Sauté them until the mushrooms are tender and any liquid they release has evaporated.
  • Stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes, stirring constantly, until the sauce thickens.
  • Return the cooked chicken to the pan and add the fresh spinach leaves. Cook for an additional 2-3 minutes, or until the spinach wilts and the chicken is heated through.
  • Taste and adjust the seasoning with more salt and pepper if needed.
  • Serve the creamy chicken and spinach over cooked pasta, rice, or with crusty bread on the side.
