Ingredients

  • 500 g boneless chicken breast cut into cubes
  • 1 red bell pepper cut into chunks
  • 1 yellow bell pepper cut into chunks
  • 1 red onion cut inot chunks
  • 2 garlic cloves minced
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground origanum
  • salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes to prevent burning

Instructions

  • In a bowl, combine the olive oil, soy sauce, lemon juice, minced garlic, paprika, ground cumin, dried oregano, salt, and black pepper. Mix well to make the marinade.
  • Place the chicken cubes in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or preferably 2-4 hours to marinate.
  • While the chicken is marinating, prepare the vegetables by cutting the bell peppers and red onion into chunks.
  • After marinating, remove the chicken from the refrigerator and let it sit at room temperature for about 10 minutes.
  • Preheat your grill or grill pan to medium-high heat.
  • Thread the marinated chicken, bell peppers, and red onion alternately onto the soaked wooden skewers.
  • Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  • Serve the chicken skewers hot with your favorite dipping sauce or over cooked rice.
