
Ingredients
Curry
- 500 g beef mince
- 500 g potatoes peeled and diced
- 2 tbsp vegetable oil
- 1 large onion finely chopped
- 2 garlic cloves minced
- 2 cm piece of ginger grated
- 2 tomatoes chopped
- 2 tsp curry powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder (adjust to taste)
- salt to taste
- 400 ml coconut milk
- fresh coriander leaves for garnish (optional)
Garnish
- fresh coriander leaves chopped
- red chili peppers sliced
Instructions
- Heat the vegetable oil in a large pot or deep skillet over medium heat.
- Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent.
- Add the minced garlic and grated ginger. Sauté for another 1-2 minutes until the garlic and ginger become fragrant.
- Add the chopped tomatoes to the pot and cook for about 5 minutes, or until they begin to soften and break down.
- Add the minced meat (beef, lamb, or chicken) to the pot. Break it up with a wooden spoon and cook until it's browned and cooked through. This should take about 5-7 minutes.
- Add the curry powder, ground cumin, ground coriander, turmeric powder, chili powder, and salt to the meat mixture. Stir well to coat the meat evenly with the spices.
- Add the diced potatoes to the pot and stir to combine with the meat and spices.
- Pour in the coconut milk and mix everything together. Bring the mixture to a gentle simmer.
- Reduce the heat to low, cover the pot, and let the curry simmer for about 20-25 minutes, or until the potatoes are tender. Stir occasionally to prevent sticking.
- Taste the curry and adjust the seasoning if needed by adding more salt or chili powder to suit your preference.
- Once the potatoes are tender and the curry has thickened to your liking, remove it from heat.
