Ingredients

Chicken

  • 4 boneless-skinless chicken breasts
  • salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 2 cup breadcrumbs
  • 1 cup grated Parmesan cheese finely chopped
  • 2 tbsp olive oil
  • 2 tbsp butter

Mushroom Sauce

  • 2 tbsp olive oil
  • 250 g mushrooms sliced
  • 2 garlic cloves minced
  • 1/2 cup dry white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • fresh parsley (chopped) for garnish

Instructions

Prepare the Chicken:

  • Season the chicken breasts with salt and black pepper.
  • In separate shallow dishes, place the flour, beaten eggs, and a mixture of breadcrumbs and Parmesan cheese.
  • Dip each chicken breast into the flour, then the eggs, and finally the breadcrumb mixture, making sure to coat each piece evenly.

Cook the Chicken:

  • In a large skillet, heat the olive oil and butter over medium-high heat.
  • Add the breaded chicken breasts and cook for about 4-5 minutes on each side or until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.

Prepare the Mushroom Sauce:

  • In the same skillet, add more olive oil if needed.
  • Add the sliced mushrooms and minced garlic. Sauté for about 5 minutes or until the mushrooms are tender and browned.
  • Pour in the white wine and cook for another 2-3 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.

Finish the Sauce:

  • Add the chicken broth and heavy cream to the skillet with the mushrooms. Stir well and bring the mixture to a simmer.
  • Let it simmer for 5-7 minutes, or until the sauce thickens. Season with salt and black pepper to taste.

Assemble and Bake:

  • Preheat your oven to 180°C (350°F).
  • Place the cooked chicken breasts in a baking dish.
  • Pour the mushroom sauce evenly over the chicken.
  • Sprinkle the shredded mozzarella cheese on top.

Bake:

  • Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden brown.

Serve:

  • Remove from the oven and garnish with chopped fresh parsley.
  • Serve your Chicken Lombardy hot with your choice of side dishes, such as pasta, rice, or vegetables.
