Ingredients
Chicken
- 4 boneless-skinless chicken breasts
- salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 large eggs
- 2 cup breadcrumbs
- 1 cup grated Parmesan cheese finely chopped
- 2 tbsp olive oil
- 2 tbsp butter
Mushroom Sauce
- 2 tbsp olive oil
- 250 g mushrooms sliced
- 2 garlic cloves minced
- 1/2 cup dry white wine
- 1 cup chicken broth
- 1 cup heavy cream
- salt and pepper to taste
- 1 cup shredded mozzarella cheese
- fresh parsley (chopped) for garnish
Instructions
Prepare the Chicken:
- Season the chicken breasts with salt and black pepper.
- In separate shallow dishes, place the flour, beaten eggs, and a mixture of breadcrumbs and Parmesan cheese.
- Dip each chicken breast into the flour, then the eggs, and finally the breadcrumb mixture, making sure to coat each piece evenly.
Cook the Chicken:
- In a large skillet, heat the olive oil and butter over medium-high heat.
- Add the breaded chicken breasts and cook for about 4-5 minutes on each side or until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
Prepare the Mushroom Sauce:
- In the same skillet, add more olive oil if needed.
- Add the sliced mushrooms and minced garlic. Sauté for about 5 minutes or until the mushrooms are tender and browned.
- Pour in the white wine and cook for another 2-3 minutes, allowing the alcohol to evaporate and the sauce to reduce slightly.
Finish the Sauce:
- Add the chicken broth and heavy cream to the skillet with the mushrooms. Stir well and bring the mixture to a simmer.
- Let it simmer for 5-7 minutes, or until the sauce thickens. Season with salt and black pepper to taste.
Assemble and Bake:
- Preheat your oven to 180°C (350°F).
- Place the cooked chicken breasts in a baking dish.
- Pour the mushroom sauce evenly over the chicken.
- Sprinkle the shredded mozzarella cheese on top.
Bake:
- Bake in the preheated oven for about 20 minutes or until the cheese is bubbly and golden brown.
Serve:
- Remove from the oven and garnish with chopped fresh parsley.
