Ingredients
- 500 g pork tenderloin thinly sliced into strips
- 2 tbsp olive oil
- 1 medium onion
- 2 garlic cloves minced
- 200 g mushrooms sliced
- 2 tbsp all-purpose flour
- 1 cup beef or vegetable broth
- 200 ml sour cream
- 2 tsp Dijon mustard
- salt and pepper to taste
- 250 g egg noodles or rice for serving
- fresh parsley for garnish
Instructions
Prepare the Pork:
- Slice the pork tenderloin into thin strips, about 1cm wide. Season with salt and pepper.
Cook the Pasta or Rice:
- Prepare the egg noodles or rice according to the package instructions. Drain and set aside.
Sauté the Pork:
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Add the pork slices and cook until browned on all sides, about 2-3 minutes per side. Remove the pork from the skillet and set it aside.
Sauté the Onions and Mushrooms:
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the chopped onions and garlic, sauté until they become translucent, about 2 minutes.
- Add the sliced mushrooms and continue to cook until they are tender and browned, about 5-7 minutes.
Make the Sauce:
- Sprinkle the flour over the mushroom mixture in the skillet and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.
- Slowly pour in the beef or vegetable broth while stirring constantly to avoid lumps. Bring the mixture to a simmer and let it thicken, which should take about 3-5 minutes.
- Stir in the sour cream and Dijon mustard, and cook for an additional 2-3 minutes until the sauce is heated through and creamy.
Combine the Pork and Sauce:
- Return the cooked pork strips to the skillet with the sauce. Stir to combine, allowing the pork to heat through in the sauce for about 2 minutes. Taste and adjust the seasoning with salt and pepper if needed.
Serve:
- Serve the pork stroganoff over the cooked egg noodles or rice.
