Ingredients

  • 500 g pork tenderloin thinly sliced into strips
  • 2 tbsp olive oil
  • 1 medium onion
  • 2 garlic cloves minced
  • 200 g mushrooms sliced
  • 2 tbsp all-purpose flour
  • 1 cup beef or vegetable broth
  • 200 ml sour cream
  • 2 tsp Dijon mustard
  • salt and pepper to taste
  • 250 g egg noodles or rice for serving
  • fresh parsley for garnish

Instructions

Prepare the Pork:

  • Slice the pork tenderloin into thin strips, about 1cm wide. Season with salt and pepper.

Cook the Pasta or Rice:

  • Prepare the egg noodles or rice according to the package instructions. Drain and set aside.

Sauté the Pork:

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the pork slices and cook until browned on all sides, about 2-3 minutes per side. Remove the pork from the skillet and set it aside.

Sauté the Onions and Mushrooms:

  • In the same skillet, add the remaining 1 tablespoon of olive oil.
  • Add the chopped onions and garlic, sauté until they become translucent, about 2 minutes.
  • Add the sliced mushrooms and continue to cook until they are tender and browned, about 5-7 minutes.

Make the Sauce:

  • Sprinkle the flour over the mushroom mixture in the skillet and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.
  • Slowly pour in the beef or vegetable broth while stirring constantly to avoid lumps. Bring the mixture to a simmer and let it thicken, which should take about 3-5 minutes.
  • Stir in the sour cream and Dijon mustard, and cook for an additional 2-3 minutes until the sauce is heated through and creamy.

Combine the Pork and Sauce:

  • Return the cooked pork strips to the skillet with the sauce. Stir to combine, allowing the pork to heat through in the sauce for about 2 minutes. Taste and adjust the seasoning with salt and pepper if needed.

Serve:

  • Serve the pork stroganoff over the cooked egg noodles or rice.
  • Garnish with fresh parsley for a pop of color and flavor.
