Ingredients

Crust

  • 300 g all-purpose flour
  • 150 g unsalted butter cold and cut into small cubes
  • 1/2 tsp salt
  • 2-3 tbsp ice water

Filling

  • 6-8 medium-sized apples (about 1kg) peeled, cored and sliced
  • 150 g granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch

Instructions

Prepare the Pie Crust:

  • In a large mixing bowl, combine the flour and salt.
  • Add the cold diced butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse breadcrumbs.
  • Gradually add the ice water, one tablespoon at a time, while mixing, until the dough comes together. You may not need all the water; stop when the dough holds together without being too wet.
  • Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Apple Filling:

  • In a large mixing bowl, combine the sliced apples, sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss everything together until the apples are well coated. Let it sit for about 10 minutes.

Preheat the Oven:

  • Preheat your oven to 190°C (375°F).

Roll Out the Pie Crust:

  • On a floured surface, roll out half of the chilled pie dough into a circle large enough to fit your pie dish.
  • Carefully transfer the rolled-out dough to a 9-inch (23 cm) pie dish. Press it into the bottom and up the sides of the dish.

Fill the Pie:

  • Spoon the prepared apple filling into the pie crust, spreading it evenly.

Top the Pie:

  • Roll out the remaining pie dough into a circle for the top crust.
  • You can create a lattice top, a full top crust with slits for venting, or any decorative pattern you prefer. Seal the edges of the top and bottom crusts by pressing them together.

Bake:

  • Place the pie in the preheated oven and bake for about 50 minutes or until the crust is golden brown and the filling is bubbling.

Cool:

  • Allow the apple pie to cool for at least 2 hours before serving to let the filling set.
    Enjoy your homemade apple pie with a scoop of vanilla ice cream or a dollop of whipped cream!
