
Ingredients
Crust
- 250 g all-purpose flour
- 125 g cold butter cut into small cubes
- 1/2 tsp salt
- 60 ml ice water
Filling
- 500 g pumpkin puree
- 150 g granulated sugar
- 2 large eggs
- 250 ml heavy cream
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/2 tsp salt
Instructions
Prepare the Pie Crust:
- In a mixing bowl, combine the flour and salt.
- Add the cold, cubed butter to the flour mixture.
- Use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs.
- Gradually add the ice-cold water and mix until the dough comes together.
- Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat the Oven:
- Preheat your oven to 190°C (375°F).
Roll Out the Pie Crust:
- On a floured surface, roll out the chilled pie crust to fit a 23 cm (9-inch) pie dish.
- Carefully transfer the crust to the pie dish and trim any excess dough.
Prepare the Pumpkin Filling:
- In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, eggs, heavy cream, ground cinnamon, ground nutmeg, ground ginger, ground cloves, and salt.
- Mix until all the ingredients are well combined and the filling is smooth.
Fill the Pie Crust:
- Pour the pumpkin filling into the prepared pie crust, spreading it evenly.
Bake the Pie:
- Place the pie in the preheated oven and bake for 45 minutes, or until the filling is set and a toothpick inserted into the center comes out clean.
Cool and Serve:
- Allow the pumpkin pie to cool completely on a wire rack.
- Once cooled, you can optionally garnish it with whipped cream or a sprinkle of cinnamon.
