Ingredients

  • 1 ripe avocado
  • 2 slices of your favorite bread
  • 2 large eggs
  • salt and pepper to taste
  • Optional toppings: crushed red pepper flakes, paprika, chopped fresh herbs (e.g., cilantro, chives), feta cheese, cherry tomatoes, or hot sauce for added flavor.

Instructions

  • Cut the ripe avocado in half lengthwise. Remove the pit carefully by gently tapping it with a knife and twisting.
  • Scoop out the avocado flesh into a bowl using a spoon.
  • Use a fork to mash the avocado until it reaches your desired consistency. You can leave it slightly chunky or make it completely smooth, depending on your preference.
  • Season the mashed avocado with a pinch of salt and pepper to taste. Mix well.
  • Toast the bread slices until they are golden brown and crispy. You can use a toaster, oven, or stovetop for this step.
  • While the bread is toasting, you can cook the eggs. There are several options for how to cook the eggs:
  • Fried Eggs: Heat a non-stick skillet over medium-low heat. Add a little oil or butter. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny (or to your desired level of doneness).
  • Scrambled Eggs: Whisk the eggs in a bowl and season with salt and pepper. Heat a non-stick skillet over medium heat, add a little oil or butter, and pour in the eggs. Cook, stirring gently, until they are just set but still slightly creamy.
  • Once the bread is toasted, spread the mashed avocado evenly on each slice.
  • Place the cooked eggs on top of the avocado-covered toast.
  • Add any optional toppings you like, such as crushed red pepper flakes, paprika, herbs, feta cheese, or hot sauce.
  • Your avocado toast with eggs is ready to be enjoyed! Serve it immediately while the eggs are still warm.
Feel free to customize your avocado toast with egg by adding other ingredients you love, such as sliced tomatoes, sautéed mushrooms, or bacon bits. It's a versatile dish that you can make your own with your favorite flavors and textures.
