Ingredients

Cake

  • 200 g unsalted butter softened
  • 200 g granulated sugar
  • 4 large eggs
  • 200 g all-purpose flour
  • 2 tsp baking powder
  • zest of 2 lemons
  • juice of 1 lemon
  • 1 tsp vanilla extract

Lemon Syrup

  • juice of 2 lemons
  • 50 g granulated sugar

Lemon Glaze

  • 200 g powdered sugar
  • juice of 1 lemon

Instructions

  • Preheat your oven to 180°C (350°F). Grease and flour a 22cm (9-inch) round cake tin or line it with parchment paper.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • In a separate bowl, sift together the all-purpose flour and baking powder. Add the lemon zest and mix well.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  • Stir in the lemon juice and vanilla extract until the batter is smooth.
  • Pour the batter into the prepared cake tin and smooth the top. Bake in the preheated oven for about 25 minutes or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, make the lemon syrup. In a small saucepan, combine the lemon juice and 50g of granulated sugar. Heat over low heat until the sugar has dissolved. Remove from heat.
  • When the cake is done, remove it from the oven and poke several holes in the top using a skewer or fork. Pour the lemon syrup over the hot cake. Allow the cake to cool in the tin for about 15 minutes, then remove it from the tin and let it cool completely on a wire rack.
  • In a small bowl, whisk together the powdered sugar and the juice of 1 lemon until you have a smooth glaze.
  • Once the cake is completely cool, drizzle the lemon glaze over the top.
  • Slice and serve your delicious homemade lemon cake. Enjoy!
