Ingredients
Pesto
- 50 g fresh basil leaves
- 30 g pine nuts
- 30 g Parmesan cheese grated
- 1 garlic cloves
- 60 ml extra virgin olive oil
- salt and pepper to taste
Pinwheels
- 1 puff pastry (approximately 250 grams)
- 100 cream cheese
- 100 sun-dried tomatoes (drained if packed in oil)
- 50 mozzarella cheese grated
- 1 egg (for egg wash)
Instructions
Prepare the Pesto:
- In a food processor, combine the fresh basil leaves, pine nuts, grated Parmesan cheese, and garlic clove. Pulse until the ingredients are finely chopped.
- While the food processor is running, slowly drizzle in the extra virgin olive oil until the pesto reaches your desired consistency. You may need to add a bit more olive oil if it's too thick.
- Season the pesto with salt and pepper to taste. Set aside.
Assemble the Pinwheels:
- Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheet on a lightly floured surface to a rectangle of about 30 x 25 centimeters.
- Spread the cream cheese evenly over the entire surface of the puff pastry.
- Next, spread the prepared pesto over the cream cheese layer.
- Sprinkle the sun-dried tomatoes and grated mozzarella cheese evenly over the pesto.
- Starting from the longer side of the rectangle, roll up the puff pastry tightly into a log.
- Slice the log into approximately 1.5 cm thick pinwheels.
Bake the Pinwheels:
- Place the pinwheels on the prepared baking sheet, spacing them a bit apart.
- Beat the egg in a small bowl and brush it over the tops of the pinwheels to give them a golden brown finish.
- Bake in the preheated oven for about 15 minutes, or until the pinwheels are puffed and golden brown.
Serve:
