Vegan lentil curry

Ingredients

Lentil Curry

  • 250 g dried green or brown lentils
  • 1 onion finely chopped
  • 2 garlic cloves
  • 1 thumb-sized piece of ginger
  • 1 red bell pepper diced
  • 1 can diced tomatoes
  • 400 ml coconut milk
  • 2 tbsp vegetable oil
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp chili powder (adjust to taste)
  • fresh coriander for garnish
  • salt to taste
  • pepper to taste

Rice

  • 250 g long-grain rice
  • 500 ml water
  • a pinch of salt

Instructions

Cook the Rice:

  • Rinse the rice under cold water until the water runs clear.
  • In a medium-sized saucepan, combine the rinsed rice, water, and a pinch of salt.
  • Bring to a boil over high heat, then reduce the heat to low, cover with a lid, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing it with a fork.

Prepare the Lentil Curry:

  • Heat the vegetable oil in a large pan or pot over medium heat.
  • Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
  • Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes.
  • Add the diced red bell pepper and cook for an additional 3-4 minutes until it begins to soften.
  • Sprinkle the curry powder, ground turmeric, ground cumin, ground coriander, and chili powder over the vegetables. Stir well to coat the vegetables in the spices, and cook for another 1-2 minutes until fragrant.
  • Add the dried lentils, diced tomatoes (with their juices), and coconut milk to the pot. Stir everything together.
  • Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the lentils are tender and the curry has thickened. You may need to add a bit of water if the curry gets too thick.
  • Season the lentil curry with salt and pepper to taste.

Serve:

  • Serve the vegan lentil curry over the cooked rice.
  • Garnish with fresh cilantro leaves.
