
Ingredients
Lentil Curry
- 250 g dried green or brown lentils
- 1 onion finely chopped
- 2 garlic cloves
- 1 thumb-sized piece of ginger
- 1 red bell pepper diced
- 1 can diced tomatoes
- 400 ml coconut milk
- 2 tbsp vegetable oil
- 2 tbsp curry powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili powder (adjust to taste)
- fresh coriander for garnish
- salt to taste
- pepper to taste
Rice
- 250 g long-grain rice
- 500 ml water
- a pinch of salt
Instructions
Cook the Rice:
- Rinse the rice under cold water until the water runs clear.
- In a medium-sized saucepan, combine the rinsed rice, water, and a pinch of salt.
- Bring to a boil over high heat, then reduce the heat to low, cover with a lid, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing it with a fork.
Prepare the Lentil Curry:
- Heat the vegetable oil in a large pan or pot over medium heat.
- Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
- Stir in the minced garlic and grated ginger, and cook for another 1-2 minutes.
- Add the diced red bell pepper and cook for an additional 3-4 minutes until it begins to soften.
- Sprinkle the curry powder, ground turmeric, ground cumin, ground coriander, and chili powder over the vegetables. Stir well to coat the vegetables in the spices, and cook for another 1-2 minutes until fragrant.
- Add the dried lentils, diced tomatoes (with their juices), and coconut milk to the pot. Stir everything together.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the lentils are tender and the curry has thickened. You may need to add a bit of water if the curry gets too thick.
- Season the lentil curry with salt and pepper to taste.
Serve:
- Serve the vegan lentil curry over the cooked rice.
