  • 200 g granulated sugar
  • 4 large eggs
  • 200 g sour cream

  • 2 tbsp vanilla extract
  • zest of 1 lemon (optional)

Instructions

Preheat the Oven:

  • Preheat your oven to 160°C (325°F).

Prepare the Crust:

  • In a food processor, pulse the digestive biscuits (or graham crackers) until they turn into fine crumbs.
  • Mix the crumbs with the melted butter and sugar until well combined.

  • Gradually add the granulated sugar while continuing to beat until well combined.

Cool and Refrigerate:

  • Turn off the oven and crack the oven door open slightly. Let the cheesecake cool in the oven for about 1 hour.
  • Remove the cheesecake from the oven and let it cool to room temperature.
  • Once it's at room temperature, cover it with plastic wrap and refrigerate for at least 4 hours, but preferably overnight to allow it to set completely.

Serve:

  • Before serving, you can add toppings like fresh fruit, fruit compote, chocolate sauce, or whipped cream, if desired.
    Enjoy your homemade cheesecake!

Bread pudding

Bread pudding

Print Pin Rate
Course: Dessert
Prep Time: 10 minutes
Cook Time: 45 minutes
Rest time: 15 minutes
Total Time: 1 hour 10 minutes
Servings: 4 people
Calories: 794kcal

Ingredients

Bread

  • 250 g of stale bread (about 4 cups, cubed)
  • 500 ml of milk (2 cups)
  • 3 large eggs
  • 100 g granulated sugar
  • 1 tsp vanilla extract
  • 50 g raisins or sultanas (optional)
  • 1/2 tsp ground cinnamon
  • butter or cooking spray for greasing the dish

Sauce (optional)

  • 100 g butter
  • 100 g granulated sugar
  • 100 ml heavy cream

Instructions

  • Preheat your oven to 180°C (350°F).
  • Grease a baking dish (approximately 20x20 cm or 8x8 inches) with butter or cooking spray.
  • Cut the stale bread into cubes or tear it into small pieces. Place the bread cubes into the greased baking dish.
  • In a mixing bowl, whisk together the eggs, sugar, vanilla extract, and ground cinnamon until well combined.
  • Heat the milk in a saucepan over medium heat until it's warm but not boiling. Remove it from the heat.
  • Gradually pour the warm milk into the egg mixture while whisking continuously. This will temper the eggs and prevent them from curdling.
  • If you're using raisins or sultanas, sprinkle them over the bread cubes in the baking dish.
  • Pour the milk and egg mixture evenly over the bread cubes. Press down on the bread cubes to make sure they soak up the liquid.
  • Let the bread pudding sit for about 15 minutes to allow the bread to absorb the liquid.
  • Place the baking dish in the preheated oven and bake for 45 minutes, or until the top is golden brown and the pudding is set. You can test for doneness by inserting a knife into the center; if it comes out clean, the pudding is ready.
  • While the pudding is baking, you can prepare the optional sauce. In a saucepan, melt the butter over low heat, then stir in the sugar and heavy cream. Cook, stirring constantly, until the sugar has dissolved, and the sauce has thickened slightly. Remove from heat.
  • Once the bread pudding is done baking, you can serve it warm with the sauce drizzled over the top.
Enjoy your delicious homemade bread pudding!

Cook Time: 50 minutes
Refrigerate and resting time: 2 hours 30 minutes
Total Time: 3 hours 35 minutes
Servings: 8 people
Calories: 423kcal

Ingredients

Crust

  • 300 g all-purpose flour
  • 150 g unsalted butter cold and cut into small cubes
  • 1/2 tsp salt
  • 2-3 tbsp ice water

Filling

  • 6-8 medium-sized apples (about 1kg) peeled, cored and sliced
  • 150 g granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch

Instructions

Prepare the Pie Crust:

  • In a large mixing bowl, combine the flour and salt.
  • Add the cold diced butter to the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse breadcrumbs.
  • Gradually add the ice water, one tablespoon at a time, while mixing, until the dough comes together. You may not need all the water; stop when the dough holds together without being too wet.
  • Form the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Apple Filling:

  • In a large mixing bowl, combine the sliced apples, sugar, ground cinnamon, ground nutmeg, lemon juice, and cornstarch. Toss everything together until the apples are well coated. Let it sit for about 10 minutes.

Preheat the Oven:

  • Preheat your oven to 190°C (375°F).

Roll Out the Pie Crust:

  • On a floured surface, roll out half of the chilled pie dough into a circle large enough to fit your pie dish.
  • Carefully transfer the rolled-out dough to a 9-inch (23 cm) pie dish. Press it into the bottom and up the sides of the dish.

Fill the Pie:

  • Spoon the prepared apple filling into the pie crust, spreading it evenly.

Top the Pie:

  • Roll out the remaining pie dough into a circle for the top crust.
  • You can create a lattice top, a full top crust with slits for venting, or any decorative pattern you prefer. Seal the edges of the top and bottom crusts by pressing them together.

Bake:

  • Place the pie in the preheated oven and bake for about 50 minutes or until the crust is golden brown and the filling is bubbling.

Cool:

  • Allow the apple pie to cool for at least 2 hours before serving to let the filling set.
Enjoy your homemade apple pie with a scoop of vanilla ice cream or a dollop of whipped cream!

Spaghetti Carbonara

Spaghetti Carbonara

Print Pin Rate
Course: Supper
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 4 people
Calories: 738kcal

Ingredients

  • 350 g spaghetti
  • 150 g guanciale or pancetta diced
  • 3 large eggs
  • 50 g Pecorino Romano cheese grated
  • 50 g Parmesan cheese
  • salt and black pepper to taste
  • 1 garlic clove (optional)
  • olive oil (for cooking)

Instructions

Boil the Spaghetti:

  • Fill a large pot with water and add a generous pinch of salt. Bring the water to a boil.
  • Add the spaghetti to the boiling water and cook according to the package instructions until al dente. Reserve about 1/2 cup (120 ml) of pasta cooking water, then drain the spaghetti.

Prepare the Sauce:

  • While the pasta is cooking, heat a bit of olive oil (if using) in a large skillet over medium heat.
  • Add the diced pancetta or guanciale to the skillet and sauté until it becomes crispy and golden brown. Remove from heat.

Whisk the Eggs and Cheese:

  • In a bowl, whisk together the eggs, grated Pecorino Romano cheese, and grated Parmesan cheese. Season with a generous amount of freshly ground black pepper. Be cautious with additional salt as the pancetta or guanciale is already salty.

Combine Everything:

  • Once the spaghetti is cooked and drained, quickly transfer it to the skillet with the cooked pancetta or guanciale. Toss to combine and coat the pasta with the rendered fat from the meat.

Add the Egg Mixture:

  • Remove the skillet from the heat to prevent the eggs from scrambling. Pour the egg and cheese mixture over the hot pasta and toss quickly to coat the pasta evenly. The heat from the pasta will cook the eggs and create a creamy sauce. If the sauce is too thick, you can add a bit of the reserved pasta cooking water to reach the desired consistency.

Serve:

  • Serve the Spaghetti Carbonara immediately while it's hot. Garnish with additional grated cheese and freshly ground black pepper if desired.

  • 300 g tagliatelle pasta
  • 150 g pancetta or guanciale diced
  • 3 large eggs
  • 75 g Pecorino Romano cheese grated
  • 50 g grated Parmesan cheese

Prepare the Carbonara Sauce:

Ingredients

Pulled Chicken

  • 500 g boneless, skinless chicken breasts
  • 1 tsp olive oil
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder (adjust to taste)
  • salt and black pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup tomato sauce
  • juice of 1 lime
  • 1 tbsp fresh coriander chopped (optional)

Quesadillas

  • 4 large flour tortillas
  • 200 g grated cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup sour cream (optional)
  • salsa for serving (optional)

Instructions

Prepare the Pulled Chicken:

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and cook until it becomes translucent, about 2-3 minutes.
  • Add the minced garlic and cook for another 30 seconds, until fragrant.
  • Season the chicken breasts with cumin, paprika, chili powder, salt, and black pepper.
  • Push the onions and garlic to the side of the skillet and add the seasoned chicken breasts.
  • Cook the chicken for about 4-5 minutes on each side or until it's no longer pink in the center.
  • Remove the chicken from the skillet and shred it using two forks.
  • Return the shredded chicken to the skillet.
  • Pour in the chicken broth, tomato sauce, and lime juice. Stir well.
  • Reduce the heat to low and simmer for about 5-10 minutes, or until the sauce thickens and coats the chicken.
  • If desired, stir in fresh cilantro.

Assemble the Quesadillas:

  • Place one flour tortilla on a clean surface.
  • Sprinkle a portion of the grated cheese evenly over one half of the tortilla.
  • Spoon a generous portion of the pulled chicken mixture over the cheese.
  • Fold the other half of the tortilla over the filling, creating a half-moon shape.
  • Repeat this process for the remaining tortillas and filling.

Cook the Quesadillas:

  • Heat a large skillet or griddle over medium heat.
  • Place one or two quesadillas in the skillet (depending on the size of your skillet) and cook for about 2-3 minutes on each side or until they are golden brown and the cheese is melted.
  • Repeat this process for the remaining quesadillas.

Serve:

  • Cut the cooked quesadillas into wedges and serve hot.
  • You can serve them with sour cream and salsa on the side if desired.
