
Ingredients
Poke Bowl
- 200 g sushi-grade raw fish (salmon, tuna, or any preferred fish), diced
- 200 g cooked sushi rice cooled
- 1 small cucumber thinly sliced
- 1 avocado sliced
- 1/2 small red onion finely chopped
- 1/4 cup edamame beans steamed and shelled
- 2-3 radishes thinly sliced
- 1 tbsp sesame seeds
- 1 nori seaweed sheet cut into thin strips
- fresh coriander or microgreens for garnish
Poke Sauce
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey or maple syrup
- 1 tsp grated fresh ginger
- 1 garlic clove minced
Instructions
Prepare the Rice:
- Rinse the sushi rice under cold water until the water runs clear.
- Cook the rice according to the package instructions.
- Once cooked, let it cool to room temperature.
Prepare the Poke Sauce:
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey or maple syrup, grated ginger, and minced garlic.
- Set the sauce aside.
Prepare the Toppings:
- Slice the cucumber, avocado, red onion, radishes, and nori seaweed sheet.
- Steam and shell the edamame beans.
Prepare the Fish:
- Dice the sushi-grade fish into bite-sized cubes.
- Place the fish in a bowl and drizzle a small amount of the poke sauce over it. Gently toss to coat. Refrigerate while you assemble the rest of the bowl.
Assemble the Poke Bowl:
- Divide the cooked sushi rice between two bowls.
- Arrange the marinated fish, sliced cucumber, avocado, red onion, radishes, and edamame beans on top of the rice.
Drizzle with Poke Sauce:
- Drizzle the remaining poke sauce over the poke bowl.
Garnish:
- Sprinkle sesame seeds and nori seaweed strips over the top.
- Add fresh cilantro or microgreens for extra flavor and garnish.
Serve:
