Ingredients

Chicken

  • 1 whole chicken (approximately 1.5 kg)
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • salt and pepper to taste

Potatoes

  • 1 kg potatoes peeled and cut into wedges
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp dried origanum
  • salt and pepper to taste

Instructions

  • Preheat your oven to 200°C (392°F).

Prepare the Chicken:

  • Rinse the chicken inside and out under cold running water. Pat it dry with paper towels.
  • In a small bowl, mix together the olive oil, minced garlic, dried thyme, dried rosemary, salt, and pepper.
  • Rub this mixture all over the chicken, making sure to get it under the skin as well.
  • Place the chicken in a roasting pan.

Prepare the Potatoes:

  • In a large mixing bowl, combine the potato chunks, olive oil, minced garlic, dried oregano, salt, and pepper.
  • Toss the potatoes until they are well coated with the seasoning mixture.

Roasting:

  • Arrange the seasoned potatoes around the chicken in the roasting pan.
  • Place the pan in the preheated oven and roast for about 1 hour, or until the chicken's internal temperature reaches 75°C (165°F) and the skin is golden brown and crispy.
  • Be sure to check the potatoes periodically and stir them to ensure even cooking.

Resting:

  • Once the chicken is done, remove it from the oven and let it rest for about 10 minutes before carving. This allows the juices to redistribute, keeping the meat moist.

Serving:

  • Carve the roasted chicken and serve it with the roasted potatoes on the side.
