Ingredients

  • 400 g canned chickpeas drained and rinsed
  • 1 cucumber diced
  • 1 red bell pepper diced

  • 2 Lemons Juiced
  • 60 ml extra-virgin olive oil

Instructions

  • If using dried chickpeas, soak them in water overnight, then drain and rinse. If using canned chickpeas, simply drain and rinse them.
  • In a large mixing bowl, combine the chickpeas, diced cucumber, diced red bell pepper, chopped red onion, halved cherry tomatoes, chopped parsley, and chopped mint leaves.
  • In a separate small bowl, whisk together the lemon juice, extra-virgin olive oil, minced garlic, salt, and pepper to create the dressing.
  • Pour the dressing over the salad ingredients in the large mixing bowl.
  • Gently toss all the ingredients together until well coated with the dressing.
  • Taste and adjust the seasoning with additional salt and pepper, if needed.
  • Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.

  • 400 g firm tofu cut into cubes

Instructions

  • Cut the tofu into cubes and place them on paper towels to remove excess moisture. You can also press the tofu with a heavy object for 20-30 minutes to extract more moisture.

  • Once the oil is hot, add the minced garlic, chopped onion, and sliced chili peppers. Stir-fry for 2-3 minutes until they become fragrant and the onions are translucent.

Instructions

  • 400 g active sourdough starter (100% hydration)
  • 500 g bread flour
  • 10 g salt
  • 300 g water (room temperature)

Instructions

Day 1: Prepare the Sourdough Starter

  • In a mixing bowl, combine 100 grams of mature sourdough starter with 100 grams of bread flour and 100 grams of water. Mix until it forms a sticky dough.
  • Cover the bowl with plastic wrap or a clean kitchen towel and let it sit at room temperature for 8-12 hours or until it has doubled in size. This is your active sourdough starter.

Day 2: Make the Dough

  • In a large mixing bowl, combine 500 grams of bread flour and 10 grams of salt.
  • Add 400 grams of the active sourdough starter and 300 grams of water to the dry ingredients.
  • Mix everything together until you have a shaggy dough.
  • Cover the bowl and let it rest for 30 minutes to 1 hour. This step, called autolyse, allows the flour to hydrate and makes it easier to work with.
  • After the autolyse, perform a series of stretch-and-folds. Wet your hand, reach under the dough, stretch it up, and fold it over the top. Repeat this process several times, rotating the bowl as you go. This helps develop gluten.
  • Cover the bowl and let the dough bulk ferment for about 3-4 hours at room temperature. During this time, perform a set of stretch-and-folds every 30 minutes for the first 2 hours.
  • After bulk fermentation, lightly flour your work surface and shape the dough into a round loaf. Place the shaped dough into a well-floured proofing basket, seam side up.
  • Cover the basket with a clean kitchen towel and let it proof at room temperature for about 1-2 hours, or until it has visibly expanded and feels lighter to the touch.

Day 3: Bake the Bread

  • Preheat your oven to 230°C (450°F). Place a Dutch oven or heavy oven-safe pot with a lid into the oven as it preheats.
  • Once the oven is preheated, carefully remove the hot pot. Place a piece of parchment paper in the bottom to prevent sticking.
  • Gently invert the proofed dough onto the parchment paper so that the seam side is now down.
  • Score the top of the dough with a sharp knife or razor blade to allow for controlled expansion during baking.
  • Place the lid on the pot and put it in the oven. Bake covered for 30 minutes.
  • Remove the lid and continue baking for an additional 15 minutes, or until the bread is deep golden brown and has a hollow sound when tapped on the bottom.
  • Remove the bread from the oven and cool it on a wire rack for at least 1 hour before slicing.

White Chocolate Ganache

  • 200 g white chocolate chopped
  • 100 ml heavy cream

Instructions

  • Preheat your oven to 180°C (350°F). Grease and line two 8-inch (20 cm) round cake pans with parchment paper.
  • In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring between each, until smooth. Set it aside to cool.
  • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Mix in the lemon zest.
  • Sift the flour, baking powder, and salt into the wet mixture and fold it in gently.
  • Stir in the melted white chocolate and milk until you have a smooth cake batter.
  • Divide the batter evenly between the prepared cake pans and smooth the tops.

  • 200 g Broccoli

Instructions

Roasted Vegetable Couscous

  • Preheat oven to 180ºC
  • Chop all vegetables and place on a large baking sheet.
  • Drizzle the olive oil over the chopped vegetables, toss to coat, then season with a couple pinches of salt and pepper. Roast the vegetables for about 45 minutes, stirring every 15 minutes or so
  • While the vegetables are roasting, begin the couscous. Bring the vegetable broth to a boil in a small sauce pot. Once boiling, stir in the couscous. Place a lid on top, remove the pot from the heat, and let the couscous sit for five minutes, or until all of the broth is absorbed. Fluff the couscous with a fork, then place in the refrigerator to begin cooling as you prepare the rest of the meal

Garlic Herb Chickpeas

  • Rinse and drain 2 15oz. cans of chickpeas. Heat 1 Tbsp oil in a large skillet over medium. Once hot, add the chickpeas, and sauté for about 5 minutes, or until the chickpeas are golden and the skins are blistered. Remove them from heat and then season with the same garlic herb spices used for the chicken (no butter). Stir until the chickpeas are coated in the herbs and spices.

Assemble

  • When the vegetables are finally finished roasting, pull out the whole garlic cloves from the baking sheet and mince them. Combine the partially cooled couscous, the roasted vegetables, garlic, and chopped parsley in a large bowl. Stir to combine. 
  • Divide the Roasted Vegetable Couscous between four containers and top with the Garlic Herb Chickpeas.

Ingredients

  • 4 potatoes medium-sized
  • 1 onion medium-sized
  • 6 eggs large
  • salt to taste
  • pepper to taste (optional)

Instructions

  • Peel the potatoes and slice them into thin rounds, about 1-2 mm thick. You can use a mandoline slicer to make this task easier.
  • Peel and thinly slice the onion.
  • Heat the olive oil in a large non-stick frying pan over medium heat.
  • Add the sliced potatoes and onions to the hot oil. Season with salt. Cook them gently, stirring occasionally, until the potatoes are tender but not browned. This should take about 10-15 minutes. The potatoes should be soft enough to be easily pierced with a fork.
  • While the potatoes and onions are cooking, crack the eggs into a large mixing bowl. Beat them well with a fork or a whisk. Season with a pinch of salt and pepper if desired.
  • Once the potatoes and onions are tender, use a slotted spoon to remove them from the pan, allowing the excess oil to drain back into the pan.
  • Add the drained potatoes and onions to the beaten eggs in the mixing bowl. Mix them gently to combine and let them sit for a few minutes to absorb the flavors.
  • Wipe the frying pan clean and return it to medium heat. Add a little more olive oil if necessary to coat the bottom of the pan.
  • Pour the potato and egg mixture back into the pan. Spread it evenly with a spatula.
  • Cook the tortilla for about 3-4 minutes on one side until it starts to set and the bottom turns golden brown. To flip the tortilla, place a large plate over the pan, and carefully invert the pan to transfer the tortilla onto the plate.
  • Slide the tortilla back into the pan (uncooked side down) and continue cooking for another 3-4 minutes or until the other side is also golden brown and the center is set. You can slightly lift the edges to check if the center is cooked.
  • Once the tortilla is cooked to your liking, remove it from the pan onto a plate. Let it cool for a few minutes before slicing it into wedges.
  • Serve your Spanish Tortilla warm or at room temperature. Enjoy!
