Prep Time: 5 minutes
Cook Time: 1 hour
Total Time: 1 hour 5 minutes
Servings: 2 people
Calories: 969kcal

Ingredients

Burger

  • 200 g dried green or brown lentils
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1 carrot grated
  • 1 red bell pepper finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika

  • 1/4 tsp black pepper
  • 150 g rolled oats
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce or tamari
  • 2 tbsp olive oil
  • 2 whole-grain burger buns
  • Lettuce, tomato, onion and other desired toppings

Instructions

  • Rinse the lentils and place them in a large saucepan with enough water to cover them by about 2.5cm (1 inch). Bring to a boil, then reduce the heat and simmer for 20-25 minutes or until the lentils are tender but not mushy. Drain and set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic and sauté for about 2-3 minutes until they become translucent.
  • Add the grated carrot and chopped red bell pepper to the skillet. Continue to cook for another 3-4 minutes until the vegetables have softened.
  • Stir in the ground cumin, ground coriander, smoked paprika, salt, and black pepper. Cook for an additional 1-2 minutes until the spices are fragrant.

  • Divide the mixture into 4 equal portions and shape them into burger patties.
  • In the same skillet used earlier, heat the remaining 1 tablespoon of olive oil over medium heat. Add the lentil burger patties and cook for about 4-5 minutes on each side or until they are golden brown and firm.
  • Toast the burger buns in the skillet or toaster until they are lightly browned.
  • Assemble your vegan lentil burgers by placing a lettuce leaf on the bottom half of each bun, followed by a lentil patty, tomato slices, onion rings, or any other desired toppings. Top with the other half of the bun.
Serve your vegan lentil burgers hot with a side of your favorite condiments and enjoy!

Ingredients

  • 400 g canned black beans drained and rinsed
  • 100 g breadcrumbs
  • 1 small onion finely chopped
  • 1 garlic clove minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder (adjust to taste)
  • salt and pepper to taste
  • 1 tbsp olive oil
  • 1 flax egg (1 tablespoon ground flaxseeds mixed with 3 tablespoons water)
  • 4 whole wheat burger buns
  • Toppings of your choice: lettuce, tomato, avocado, vegan mayo, etc.

Instructions

  • Prepare the Flax Egg: In a small bowl, mix 1 tablespoon of ground flaxseeds with 3 tablespoons of water. Let it sit for about 5 minutes to thicken and form a gel-like consistency.
  • Sauté Onion and Garlic: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the finely chopped onion and minced garlic. Sauté for about 3-4 minutes, or until the onion becomes translucent.
  • Prepare the Bean Mixture: In a large mixing bowl, add the drained and rinsed black beans. Mash them with a fork or potato masher until mostly smooth, leaving some small chunks for texture.
  • Combine Ingredients: Add the sautéed onion and garlic, flax egg, breadcrumbs, ground cumin, paprika, chili powder, salt, and pepper to the mashed beans. Mix everything together until well combined.
  • Form Patties: Divide the mixture into 4 equal portions. Shape each portion into a patty using your hands. If the mixture is too sticky, you can wet your hands to prevent it from sticking.
  • Cook the Burgers: Heat a bit of olive oil in a skillet over medium-high heat. Once hot, add the black bean burger patties. Cook each side for about 4-5 minutes, or until they are nicely browned and heated through.
  • Assemble the Burgers: Toast the whole wheat burger buns if desired. Place a black bean patty on the bottom half of each bun. Add your choice of toppings like lettuce, tomato, avocado, and vegan mayo. Top with the other half of the bun.
  • Serve: Serve your vegan black bean burgers hot with a side of your favorite salad or fries.
Enjoy your delicious homemade vegan black bean burgers!

Ingredients

  • 1 medium head of cauliflower
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp paprika
  • 1/2 tsp cumin powder
  • salt and pepper to taste
  • fresh coriander for garnish (optional)

Instructions

Preheat the Oven:

  • Preheat your oven to 200°C (400°F) and position the rack in the middle.

Prepare the Cauliflower:

  • Wash the cauliflower and remove the leaves and stem. Cut it into small florets.

Season the Cauliflower:

  • In a large mixing bowl, combine the cauliflower florets, minced garlic, paprika, cumin powder, salt, and pepper.
  • Drizzle the olive oil over the cauliflower and toss everything together until the florets are evenly coated with the seasonings and oil.

Arrange on Baking Sheet:

  • Spread the seasoned cauliflower florets in a single layer on a baking sheet lined with parchment paper. Make sure they are not crowded to allow for even roasting.

Roast in the Oven:

  • Place the baking sheet in the preheated oven and roast for about 25 minutes or until the cauliflower is tender and golden brown. You can check for doneness by inserting a fork into a floret; it should go in easily.

Serve:

  • Once the cauliflower is roasted to your liking, remove it from the oven. Garnish with fresh parsley or cilantro if desired.

Enjoy:

  • Serve your roasted cauliflower hot as a side dish or as a healthy snack. It's delicious on its own or with a dipping sauce of your choice.
Feel free to adjust the seasonings to your taste preferences, and enjoy your delicious roasted cauliflower!
