Cacio e Pepe

Cacio e Pepe

Print Pin Rate
Course: Supper
Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 2 people
Calories: 690kcal

Ingredients

  • 200 g spaghetti or other pasta
  • 100 g Pecorino Romano cheese finely grated
  • 2 tsp coarsely ground black pepper
  • 2 tbsp extra-virgin olive oil
  • salt (for boiling water)

Instructions

Boil the Pasta:

  • Fill a large pot with water and bring it to a boil.
  • Add a generous amount of salt (about 10 grams or 2 teaspoons) to the boiling water.
  • Add the pasta and cook it according to the package instructions or until it's al dente, usually around 8-10 minutes.

Toast the Pepper:

  • While the pasta is cooking, heat a large skillet over medium-low heat.
  • Add the coarsely ground black pepper to the skillet and toast it gently for about 1-2 minutes, or until it becomes fragrant. Be careful not to burn it.

Prepare the Sauce:

  • Once the pasta is cooked, use a pasta scoop to transfer it directly from the pot to the skillet with the toasted pepper. Do not drain the pasta completely, as you want some pasta water to be added to the sauce.
  • Drizzle the olive oil over the pasta and toss it together with the toasted pepper until the pasta is well coated.

Add Cheese and Toss:

  • Gradually add the freshly grated Pecorino Romano cheese to the pasta while continuously tossing and stirring. If the sauce is too thick, you can add a bit of the pasta cooking water to help create a creamy consistency.
  • Keep tossing until the cheese melts and forms a creamy, silky sauce that coats the pasta evenly. It should take about 2-3 minutes.

Serve:

  • Once the pasta is well coated with the cheese and pepper sauce, remove it from the heat.
  • Plate the Cacio e Pepe immediately and garnish with a little extra black pepper and grated Pecorino Romano cheese if desired.
Enjoy your homemade Cacio e Pepe! It's a simple yet incredibly delicious pasta dish.

Course: Supper
Prep Time: 5 minutes
Cook Time: 1 hour
Total Time: 1 hour 5 minutes
Servings: 6 people
Calories: 296kcal

Ingredients

  • 1 kg chicken wings
  • 4 tbsp soy sauce
  • 4 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp olive oil
  • 1 tbsp sesame oil
  • 2 garlic cloves minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch (cornflour)
  • salt and pepper to taste
  • sesame seeds and chopped green onions for garnish

Instructions

  • Preheat your oven to 200°C (392°F).
  • In a mixing bowl, combine the soy sauce, honey, rice vinegar, olive oil, sesame oil, minced garlic, and grated ginger. Whisk them together until well blended.
  • Season the chicken wings with salt and pepper to taste.
  • Place the chicken wings in a large resealable plastic bag or a mixing bowl.
  • Pour half of the marinade over the chicken wings and seal the bag or cover the bowl. Reserve the other half of the marinade for later.
  • Marinate the chicken wings in the refrigerator for at least 30 minutes, or preferably, up to 2 hours to allow the flavors to meld.
  • Line a baking sheet with parchment paper or aluminum foil for easy cleanup. Place a wire rack on top of the lined baking sheet.
  • Arrange the marinated chicken wings on the wire rack in a single layer, allowing any excess marinade to drip off.
  • Bake the chicken wings in the preheated oven for about 25-30 minutes or until they are cooked through and crispy, turning them once halfway through cooking.

  • Once the chicken wings are done baking, remove them from the oven and brush the thickened glaze over the wings while they are still hot.
  • Garnish the sticky honey soy wings with sesame seeds and chopped green onions.
  • Serve the wings hot as an appetizer or main course. Enjoy!
These sticky honey soy wings are deliciously flavorful and perfect for any occasion. Adjust the sweetness and saltiness to your liking by tweaking the honey and soy sauce quantities.

  • Heat a large wok or a deep frying pan over high heat.
  • Add 1 tablespoon of vegetable oil and swirl it around to coat the pan.
  • Remove the marinated beef from the marinade, allowing any excess liquid to drain off. Reserve the marinade for later.
  • Add the beef to the hot wok and stir-fry for 2-3 minutes until it's browned. Remove the beef from the wok and set it aside.

Stir-Fry the Vegetables:

  • In the same wok, add another tablespoon of vegetable oil.
  • Add the sliced onion and stir-fry for 1-2 minutes until it starts to soften.
  • Add the sliced bell peppers, carrots, mushrooms, and broccoli florets. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

Combine and Finish:

  • Return the cooked beef to the wok with the vegetables.
  • Add the snow peas and sliced spring onions.
  • Pour in the reserved marinade and oyster sauce.
  • Stir-fry everything together for an additional 2-3 minutes until the sauce thickens, and the ingredients are well coated.

Season and Serve:

  • Taste the stir-fry and season with salt and pepper as needed.
  • Serve the steak stir-fry hot over cooked rice or noodles, garnished with extra sliced spring onions or sesame seeds if desired.
Enjoy your homemade steak stir-fry with fresh, colorful vegetables and flavorful marinade!
