  • 500 g potatoes (about 2 medium-sized potatoes)
  • 1 small onion
  • 2 garlic cloves
  • 1/4 cup gluten-free flour
  • 1/4 tsp baking powder

  • 1/4 tsp black pepper to taste
  • 1/4 tsp paprika (optional, for added flavor)
  • 2 eggs large
  • 2-3 tbsp vegetable oi (for frying)

Gluten-free chicken nuggets

Gluten-free chicken nuggets

Print Pin Rate
Course: Supper
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Servings: 16 nuggets
Calories: 81kcal

Ingredients

  • 500 g chicken breasts or chicken tenders boneless, skinless
  • 100 g breadcrumbs gluten-free (you can use store-bought or make your own using gluten-free bread)
  • 50 g Parmesan cheese grated (make sure it's gluten-free)
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste
  • 2 eggs
  • cooking oil (such as vegetable oil or canola oil) for frying

Instructions

  • Prepare the Chicken: Cut the chicken breasts or tenders into bite-sized pieces. Season them with a pinch of salt and pepper.
  • Prepare the Coating Mixture: In a shallow bowl, combine the gluten-free breadcrumbs, grated Parmesan cheese, paprika, garlic powder, and onion powder. Mix well.
  • Whisk the Eggs: In another shallow bowl, beat the eggs until well combined.
  • Coat the Chicken: Dip each piece of chicken into the beaten eggs, allowing any excess to drip off. Then, roll it in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere. Place the coated chicken nuggets on a plate or tray.
  • Heat the Oil: In a large skillet or frying pan, heat about 2-3 centimeters (1 inch) of cooking oil over medium-high heat until it reaches about 175°C (350°F). You can test the oil's readiness by dropping a small piece of breadcrumb into the oil. If it sizzles and floats to the top, the oil is hot enough.
  • Fry the Chicken Nuggets: Carefully add the coated chicken nuggets to the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes per side, or until they are golden brown and cooked through. You may need to adjust the cooking time depending on the size of your nuggets.
  • Drain and Serve: Once cooked, use a slotted spoon to remove the chicken nuggets from the oil and place them on a plate lined with paper towels to drain any excess oil.
  • Serve: Serve your homemade gluten-free chicken nuggets with your favorite dipping sauces, such as ketchup, barbecue sauce, or honey mustard.
Enjoy your homemade gluten-free chicken nuggets!

  • Break the milk chocolate bars into pieces and place them on top of the graham crackers.
  • In a separate bowl, measure out the marshmallows.
  • If you have access to a campfire or grill, you can roast the marshmallows over an open flame until they are golden brown and slightly melted on the inside. If not, you can use an oven or a kitchen torch to lightly brown the marshmallows.
  • Once the marshmallows are toasted to your liking, place them on top of the chocolate-covered graham crackers.
  • Top each marshmallow-topped cracker with another graham cracker to create a sandwich.
  • Gently press the top cracker down to squash the marshmallow and chocolate slightly.
  • Let the s'mores cool for a minute or two to allow the chocolate to melt slightly.
  • Serve immediately and enjoy your delicious s'mores!
Remember to be careful when working with an open flame or a kitchen torch, and always supervise children when making s'mores. Enjoy!

Ingredients

Pesto

  • 50 g fresh basil leaves
  • 30 g pine nuts
  • 30 g Parmesan cheese grated
  • 1 garlic cloves
  • 60 ml extra virgin olive oil
  • salt and pepper to taste

Pinwheels

  • 1 puff pastry (approximately 250 grams)
  • 100 cream cheese
  • 100 sun-dried tomatoes (drained if packed in oil)
  • 50 mozzarella cheese grated
  • 1 egg (for egg wash)

Instructions

Prepare the Pesto:

  • In a food processor, combine the fresh basil leaves, pine nuts, grated Parmesan cheese, and garlic clove. Pulse until the ingredients are finely chopped.
  • While the food processor is running, slowly drizzle in the extra virgin olive oil until the pesto reaches your desired consistency. You may need to add a bit more olive oil if it's too thick.
  • Season the pesto with salt and pepper to taste. Set aside.

Assemble the Pinwheels:

  • Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.
  • Roll out the puff pastry sheet on a lightly floured surface to a rectangle of about 30 x 25 centimeters.
  • Spread the cream cheese evenly over the entire surface of the puff pastry.
  • Next, spread the prepared pesto over the cream cheese layer.
  • Sprinkle the sun-dried tomatoes and grated mozzarella cheese evenly over the pesto.
  • Starting from the longer side of the rectangle, roll up the puff pastry tightly into a log.
  • Slice the log into approximately 1.5 cm thick pinwheels.

Bake the Pinwheels:

  • Place the pinwheels on the prepared baking sheet, spacing them a bit apart.
  • Beat the egg in a small bowl and brush it over the tops of the pinwheels to give them a golden brown finish.
  • Bake in the preheated oven for about 15 minutes, or until the pinwheels are puffed and golden brown.

Serve:

  • Remove from the oven and let them cool slightly before serving.
Enjoy your delicious party pesto pinwheels with friends and family!
